法式馬卡龍 Macaron (French Meringue Base)


從來都覺得馬卡龍好難吃, 好甜…
可是原來是自己沒吃過好吃的…
這次學做了, 內軟外脆,超好味而且吃不停啊!!!



法式馬卡龍 
Macaron 
(French Meringue Base)

18件份量 Make 18 pieces

特別用具
1厘米直徑圓形唧咀
1 cm plain piping nozzle

馬卡龍 Macaron
蛋白55 Egg White 55g
砂糖25 Sugar 25g
糖霜100Icing Sugar 100g
杏仁粉63Ground Almond 63g
雲尼拿香油少許 Several drops of Vanilla extract
食用色素少許 Several drops of food colouring

1.把蛋白置在粉盆中然後打至軟忌廉狀
2.慢慢加入砂糖(2)
3.繼續攪打至蛋白呈硬忌廉狀
4.篩入糖霜及杏仁粉輕輕拌勻至光滑
5.拌入雲尼拿香油及食用色素拌勻
6.把拌勻的蛋白盛入已配有1厘米圓形唧花咀的唧花袋中
7.在己墊焗紙的焗板上唧出約3.5厘米大少圓形
8.室溫中風乾20-30分鐘
9.用手指觸摸餅表面, 如麵糊不沾手
10.  即可放入已預熱15分鐘130C焗爐焗15分鐘至乾身,
11. 8分鐘放中層上下火, 再放下層封頂焗底部
12.   將餡料塗在2片蛋白杏仁餅之間即成

Whisk egg whites in a mixing bowl using an electric beater until creamy.  Gradually add in sugar until stiff peaks form.

Fold in sifted icing sugar and ground almond.  Stir until smooth.  Fold in vanilla extract and food colouring mix well.

Spoon egg whites mixture into a piping bag fitted with a 1 cm pain piping nozzle, and pipe 3.5 cm round shapes onto the baking paper lined in a baking sheet.  Leave to air dry for about 20-30 minutes until macarons are no longer sticky whenbeing touched with finger.  Preheat oven to 130C.  Bake for 15 minutes or until dry.

Sandwich the macarons with selected fillings before serving.

熱情果忌廉餡 Passionfruit butter cream filling

無鹽牛油30  Unsalted butter (room temperature) 30g
檸檬汁1茶匙 Lemon Juice 1 tablespoon
熱情果果茸1湯匙 Passionfruit puree 1 tablespoon
粟粉1茶匙   Corn flour 1 teaspoon


檸檬汁熱情果困茸及粟粉混合, 以微波爐加熱30秒至杰身, 放涼
Mix lemon juice, passionfruit puree and corn flour, then cook with microwave oven for 30 seconds until ticken.  Let cool.

用電動打蛋機把牛油攪打至軟滑
加入熱情果醬攪至軟滑
Use an electric hand mixer and cream the butter until soft and smooth.  Add in passionfruit mixture and cream until soft and creamy.


焦糖鹽味牛油忌廉餡 Salted caramel butter cream filling

無鹽牛油40(切粒)  Unsalted butter (in cubes) 40g
40Sugar 40g
2茶匙 Water 2 teaspoon
攪用忌廉2湯匙 Whipping cream 2 tablespoon
1/4 茶匙鹽 Salt 1/4 teaspoon

砂糖水放煲內拌勻, 用大火煮至焦糖色慢慢加入暖忌廉及鹽再煮至深焦糖色效涼
Mix sugar and water in a saucepan and stir well.  Bring to the boil until color of the syrup caramelized.  Slowly add in warmed whipping cream, salt and boil until dark caramel color.  Let cool.

用電動打蛋機慢慢加入牛油攪打至軟滑

Use and electric hand mixer add in butter and cream until soft and smooth.
